golden chicken shawarma bowl
with turmeric rice, pickled veggies and garlic toum

for the turmeric rice:
1 cup basmati or jasmine rice
2 cups water
chicken bouillon (as per package directions)
1/2 tsp turmeric
1/4 cup frozen mixed vegetables (peas, carrots, corn)
salt + pepper to taste
for the chicken:
6 boneless skinless chicken thighs
2 tbsp olive oil
smoked paprika
tumeric
cumin
cloves
onion powder
garlic powder
lemon
veggies + toppings:
1/4 cup cherry tomatoes (halved)
1/4 cup Lebanese cucumber (sliced)
pickled beets, turnips + red onions
a dollop of toum (garlic sauce)

Feel free to add chopped jalapeños to the pineapple salsa for an extra kick!

This is an awesome, quick week-night dinner recipe, it’s high in protein and fibre, and packed with vibrant colours which means a wide range of vitamins + minerals. It is naturally gluten-free (like everything here at Good Feelings Kitchen is), and can easily be made dairy-free by swapping greek yog for coconut yog (we love Yoggu! here) and can be made vegan by using oyster mushrooms in place of chicken.
