golden chicken shawarma bowl

with turmeric rice, pickled veggies and garlic toum

  • for the turmeric rice:

    • 1 cup basmati or jasmine rice

    • 2 cups water

    • chicken bouillon (as per package directions)

    • 1/2 tsp turmeric

    • 1/4 cup frozen mixed vegetables (peas, carrots, corn)

    • salt + pepper to taste

    for the chicken:

    • 6 boneless skinless chicken thighs

    • 2 tbsp olive oil

    • smoked paprika

    • tumeric

    • cumin

    • cloves

    • onion powder

    • garlic powder

    • lemon

    veggies + toppings:

    • 1/4 cup cherry tomatoes (halved)

    • 1/4 cup Lebanese cucumber (sliced)

    • pickled beets, turnips + red onions

    • a dollop of toum (garlic sauce)

    • lemon wedge

  • Feel free to add chopped jalapeños to the pineapple salsa for an extra kick!

This is an awesome, quick week-night dinner recipe, it’s high in protein and fibre, and packed with vibrant colours which means a wide range of vitamins + minerals. It is naturally gluten-free (like everything here at Good Feelings Kitchen is), and can easily be made dairy-free by swapping greek yog for coconut yog (we love Yoggu! here) and can be made vegan by using oyster mushrooms in place of chicken.

Proteins:

  • Chicken thighs (main source)

  • Greek yogurt/labneh (for protein + fats)

  • Add hummus or chickpeas for an extra plant-based protein and boost of fibre

Carbohydrates:

  • Turmeric rice

  • Cherry tomatoes, cucumbers, pickled veggies, beets (all contribute natural sugars and fibre)

Fats:

  • Greek yogurt/labneh (healthy fat + protein)

  • Olive oil (in marinade)

  • Add tahini for more healthy fats

Fibre:

  • Veggies, pickled veg, and turmeric rice

  • Pickled onions, beets + turnips also support gut health - fermentation = good bacteria
